FOR THE OREO COOKIE CRUST

πŸ”…5 tablespoons unsalted butter, melted

FOR THE MINT MOUSSE FILLING

πŸ”…16 ounces cream cheese 
πŸ”…1 cup powdered sugar 
πŸ”…1 1/3 cups heavy whipping cream (cold)
πŸ”…1 tablespoon peppermint extract
πŸ”…1 drop leaf Green gel paste color (optional)
πŸ”…4 oreo cookies, roughly chopped (optional)

FOR THE TOPPING

πŸ”…3/4 cup heavy whipping cream (cold)
πŸ”…3 tablespoons powered sugar 
πŸ”…chocolate shavings, for garnish

TO MAKE THE OREO COOKIE CRUST

ONE   Process cookies until thin.

TWO  Drizzle in the melted butter and toss together until combined.

THREE  Press the mixture into the bottom of a standard sized pie dish 

TO MAKE THE MINT MOUSSE FILLING

ONE  Whip the cream cheese and powdered sugar together on medium speed until smooth. 

TWO  While continuing to whip, add the heavy cream in a slow, steady stream. 

THREE  When all the cream has been added, turn the mixer up to high speed and whip until the mousse can hold stiff peaks (about 30 seconds). 

FOUR  Fold in the peppermint extract, green food coloring, and chopped Oreos (if using). 

FIVE  Transfer the filling to the prepared pie crust, and top with whipped cream and chocolate shavings. Enjoy!
