The name Gulab Jamun comes from Persian: “Gulab” means “rose water” and “Jamun” refers to a dark-colored Indian fruit similar to a plum. For the balls:

1 cup powdered milk

1/4 cup wheat flour

1/4 teaspoon baking soda

2 tablespoons ghee (clarified butter)

1/4 cup milk

1 teaspoon lemon juice

For the syrup:

2 cups of sugar

1 cup of water

1/2 teaspoon cardamom powder

1 teaspoon rose water or orange blossom essence

Saffron threads (optional)

To fry:

Vegetable oil or ghee in sufficient quantity

1. Prepare the dough: In a bowl, mix the milk powder, flour and baking soda. Add the ghee and rub with your fingers until you get a sandy texture. Add the milk and lemon juice little by little until it forms a soft dough. Don’t knead too much, just enough to integrate the ingredients.

2. Form the balls: Divide the dough into small portions and shape them into balls without cracks. They should be the size of a marble, as they will grow as they fry and absorb the syrup.

3. Fry the Gulab Jamun: Heat the oil or ghee over medium-low heat. Fry the balls slowly until they turn a uniform golden brown. Stir carefully to avoid burning.

4. Prepare the syrup: While the balls are cooling, boil the water with the sugar and cardamom for 5-7 minutes until you obtain a light syrup. Add the rose water and saffron.

5. Dip in syrup: Add the hot Gulab Jamun to the warm syrup and let them sit for at least 2 hours so that they absorb the liquid well.

Do not over-knead the dough; It should be soft but not sticky.

Fry over low heat so that the balls cook evenly inside.
